hearty banana-bran muffins


yummy, lots of fiber, my kids love 'em, i love 'em!

heat oven to 375
line 12 muffin tins

1 cup plain flour
1 cup wheat bran
1 teaspoon baking soda
1/2 cup chopped walnuts or pecans (I used macadamia nuts and it tasted yummy)
1 cup mashed ripe banana
1/2 cup butter (or canola oil, or even applesauce to be totally healthy but I think you'd need about 1 cup to keep them moist enough. Try it.)
1/2 cup firmly packed brown sugar
1 egg

In bowl, stir together flour, wheat bran, baking soda and nuts. Set aside. In another bowl, beat together the banana and butter until mixed, then add brown sugar and egg and beat until completely mixed. Add the combined dry ingredients and stir just until blended.
Spoon mixture into muffin pan. Bake until toothpick comes out clean, 15-20 minutes. Let cool in pan 3-5 minutes, then remove.

i like the fiber detail thoguh, arent pregnant women supposed to be having a lot of that?
