a good thing

with all this rain and wind, i've been feeling like soups and stews and chilis. and the perfect accompaniment to either of those things for me, is a good corn bread. my favorite corn bread recipe comes from this book:

here it is, for those interested:

Corn Bread

1 1/4 c. unbleached white flour

3/4 c. corn meal

4 Tbs. sugar

5 tsp. baking powder

3/4 tsp. salt

1 egg

1 c. milk

2 Tbs. melted butter

Sift dry ingredients. Beat the egg with the milk and add it to the flour mixture along with the melted butter. Stir everything up well.

Spread batter in a buttered 9" pie dish or 8"x8" square pan and bake in a preheated 375-degree oven for 30 - 35 minutes, or until it is lightly browned around the edges.

Serves 4 -6 generously.

**note** sometimes i substitute powdered milk for regular milk and just add some water to make it equal 1 cup and it still turns out so yummy!
